I think the most reasonable choice would be the TM Thompson. It would work for a US solider, a Brit one, and if you get bored with WWII it turns into a pulse rifle.
There are threads on Arnies Airsoft with some hand built weapons of that vintage. I don't know about how "easy" they are to replicate though
Weapons like the Bren, the Thompson, & both Browning machine guns were first made in a time when gunsmith was an artist vs. an assembly line worker. The M3 grease gun and the Sten were a bit sloppier but still getting one to the point where you'd be happy to be seen with it could be a long road.
And then of course there's the inevitable risk that when you build a firearm someone may drop by and arrest you.
