I use some "Made in Pakistan" SAP gloves. Leather palm/fingers/knuckles with steel shot sewn around the knuckles.
Even with a loose fitting size, I have no problems operating the firing controls on my M1911, M11, or even loading BBs one at a time into a GBB mag.
